Niki Nakayama is the chef and owner of n/naka, a Los Angeles-based kaiseki restaurant. As one of the few female kaiseki chefs in the world, it’s pretty inspiring to hear her story and the philosophy behind what she creates. The best part of all? Being able to watch how her beautiful 13-course tasting menu comes together on each plate.
