Red Wine Poached Pear Recipe

Here, Chanelle Schoon, of Schoon De Companje, shares her delicious recipe for red wine poached pears, as seen at Jackie Burger’s Salon 58 Magic soirée.

INGREDIENTS

  • 2L red wine
  • 30 cardamom pods
  • 2 vanilla pods
  • 5 star anise
  • ½ cup honey
  • 2 cinnamon sticks
  • 1 bay leaf
  • 10 pears (peeled)

METHOD

Combine wine, honey and all spices. Bring to the boil, remove from the heat and place the pears in the liquid for about one hour. Remove the pears and refrigerate. Reduce the liquid until half. Pour liquid over pears when serving.

Makes 10 pears.
