Joburg’s iconic hilltop hotel, Four Seasons The Westcliff is now home to View. The restaurant falls under executive chef Dirk Gieselmann, who recently completed a seven year stint as Chef de Cuisine at a three Michelin star French restaurant.
Inside the restaurant, diners are treated to intimate spaces with dramatic decor, featuring work from some of Joburg’s up-and-coming artists. To fully appreciate the view from View, there’s also a terrace dining area. Moving away from the traditional fine dining experience, tablecloths have been cast aside in favour of solid granite tabletops.
The cuisine is grounded in South African flavours and seasonal produce. “I’ve been having a lot of fun playing with local ingredients,” says Dirk Gieselmann. “I love the quality of the venison and am busy developing a springbok Wellington for the winter menu. I also enjoy pairing ingredients that are poor and rich, humble and extravagant, such as skate wing and truffle, or salmon trout and Oscietra caviar.”
