Belgian pâtissier Ksenia Penkina’s remarkable cakes are works of art.

It takes, she says, some three days to produce just one of these breathtaking confections, as all the elements are made from scratch, but it is without a doubt the shiny mirror glaze surrounding each cake that takes them to the next level.

So glossy that you can see your reflection in them, the glazes are made from a chocolate base and finished off in jewel tones that are reminiscent of polished gems.
