The story of Saurwein Wines traces back to 17th-century Austria, where Jessica Saurwein’s ancestors crafted “sour wine” for the Emperor. Today, that legacy finds fresh expression across four carefully chosen cool-climate South African vineyard sites: Elandskloof, Hemel-en-Aarde, Elgin, and Stanford. The 2024 vintage, produced for the first time in the winery’s own cellar in Stanford, marks a milestone achievement in the decade-long journey of Saurwein Wines.

What distinguishes Saurwein in an increasingly crowded premium market is its commitment to storytelling. For Jessica, producing fine wine and advancing regenerative agriculture has always been more than a personal quest. Her vision is to create meaning beyond pleasure: delicious wines, paired with stories and labels that reflect their origin and character.

The artwork for Jessica’s first estate-made vintages – Nom Pinot Noir 2024, Om Pinot Noir 2024, and Chi Riesling 2025 – was created in collaboration with fine artist Isabella Kuijers, with help from designer Robyn de Toorn. Each label alludes to the aromas within the bottle, drawing connections between the wines and the natural flora and fauna of their vineyard surroundings.

Nom Pinot Noir takes its name from African mythology. Nom is short for nombulelo (gratitude, in Xhosa), and recalls Nomkhubulwane, an African goddess of agriculture who was once prayed to for rain, fertility, and abundance. The label of Nom Pinot Noir, which echoes the wine’s deep berry aromatics and layered flavour, features Proteas and Ericas from the surrounding mountains, with roses symbolising promise.

Om Pinot Noir draws its name from the sacred Om symbolising universal creation and peace. Its vineyards lie in the Hemel-en-Aarde Ridge (“Heaven and Earth”), a serene landscape close to Jessica’s heart. The label depicts flora and fauna of the Babylonstoren mountain reserve that surrounds the vineyard, fostering the connection between land and wine.

Chi Riesling means “life force” and references Chiuta, an African rain god. Its final cuvée combines 80% grapes from the fertile Elgin Valley with 20% from the Upper Hemel-en-Aarde Valley, grown on the mountain slopes above Karwyderskraal dam. The apples on the label pay homage to the region’s long history of apple farming.

ALMAVIVA RED BLEND 2017 – Maipo Valley, Chile

The estate, which is a joint venture between Château Mouton Rothschild and Concha y Toro, was launched in 1998. For his 2017 vintage, winemaker Michel Friou selected an elegant yet robust combination of 65% Cabernet Sauvignon, 23% Carménère (Chile’s emblematic grape), 5% Cabernet Franc, 5% Petit Verdot and 2% Merlot. It has a very special nose of blackberry leaves, oak spice, chocolate, earth and fig, and the palate is exceptional. This is a well-balanced wine with a full body structure second to none. Pair with any cut of beef or a creamy pasta, and decant at least 10 minutes before serving. Use a Bordeaux glass for maximum enjoyment.

DOMAINE DE LA ROMANÉE-CONTI RICHEBOURG GRAND CRU 2009 – Côte de Nuits, France

The DRC Richebourg 2009 (Grand Cru) is a big, muscular wine made from 100% Pinot Noir grapes. It bursts from the glass with a hugely expressive bouquet of cassis, fresh blueberries, ripe plums, black cherries, mocha, liquorice and tender sweet spices. This wine is excellent on the palate and evolves tremendously in the glass, exhibiting layers of black and red fruits, a slight hint of nuttiness, melting tannins and a succulent finish. Pair with duck and beetroot- infused sauce. Expect to pay €10 000 (more than R200 000) a bottle, and either put it away for decades or drink it right now. Serve in a Zalto Burgundy glass and drink within three days of opening.

What guides us in finding the perfect pairing for Pinotage? The only sensible rule we’ve found to follow is this one: good Pinotage, good food. And, thankfully, good Pinotage is an excellent partner to almost every quality dish.

Creating a perfect food and wine pairing is an art. The wine reveals a bouquet of aromas, that first sip tantalises, the flavours linger. Then the food contributes its own sensory experience, the delicious smells, that mouthwatering first bite. The real test is in the second sip of wine: will the medley of flavours enhance like a perfect harmony, or does the wine suddenly taste bitter, stringent, insipid?

Understanding which wine to place with your food can elevate your dining experience, so it is important to choose wisely. 

Play matchmaker with Pinotage

Young Pinotage boasts a berried beauty, while older Pinotage’s flavour profile is more voluptuous, more complex. For this reason, most connoisseurs believe the medium-bodied Pinotage to pair magnificently with freshly-caught game fish or a rich winter bean soup. Leave the full-bodied variety to the heartier dishes, such as oxtail or osso buco. Well-wooded Pinotage carries hints of coffee and chocolate, making it the ideal complement to various sweet treats.

Consider these guidelines, however, pencil-written and subject to personal taste.

Established cellars and aspiring youth alike have seen the promise of Pinotage, and the vision has inspired unparalleled growth.

Since its development and commercialisation in the 1950’s, Pinotage has grown from just over 660 000 vines in 1979, to nearly 21 million vines in South Africa, making it 3rd most planted after Cabernet Sauvignon and Shiraz.

A generation of young winemakers are driving the potential of Pinotage and the industry in general, with a focus on craftsmanship.

Pinotage deserves the spotlight

“Locally and internationally, a lot of people are asking for Pinotage,” explains Warren Ellis, Winemaker at Neil Ellis in the Stellenbosch Wine Valley. “One of the reasons is the diversity of styles these days. It’s truly unique, I’d say. A South African story. And I think with the quality our producers are rolling out these days certainly deserves a spot in the limelight.”

The Pinotage Association, sponsored by Absa, has been critical in not only elevating the skill and knowledge around Pinotage production, but also improving the general perception of the wine in the market. The annual Absa Top 10 Pinotage Awards ceremony is one such platform, recognising the best Pinotage and generating hype around these wines and the cultivar in general.

Inspiring a new generation

The dedication and determination is inspiring the youth to join the industry and carry on the legacy. “What I do see around me is the focus on doing something that is a passion, something that you want to do,” says Wiehan Venter, who is part of the Pinotage Practical Program to cultivate young talent. “Wine and the wine industry represents that for me. It is a world of passionate people.”

It is this commitment to excellence that will allow South African wine to navigate the challenges ahead. Let us then toast to those who led the way, those who drive the industry forward, and those who are still to come.

In wine, age counts. It plays a vital role – usually to the positive.

Serious wines, the afficionados say, need years in the bottle to truly come to the fore in displaying their stirring complexity and individual personality. Years count in historical terms, too. The South African wine industry frequently refers to the year 1659, the year in which the first Cape wine was made, making the country the oldest continuous wine producing country in the so-called new world which includes North and South America, Australia and New Zealand. Nice, that.

Another astounding fact that is not often mentioned, is the Western Cape, South Africa’s major wine region, is made-up of some of the oldest pieces of earth found, well, on earth. This is true – the Cape winelands are home to soils that evolved some 700m years ago. Back then when continents were formed, seas backed off and the planet’s internal power made mountains rise which over millennia crumbled and decomposed to form the layers of soil in which South Africa’s vineyards are rooted.

“So, when we introduced a wine called Seriously Old Dirt,” says Mike Ratcliffe, owner and CEO of luxury wine Vilafonté which is responsible for the Seriously Old Dirt red blend, “the words on the label remains true to its name, underscoring the unique proposition of South African wine in that our vineyards are set on some of the oldest pieces of earth known to man.

“It is a bold story, physical and tangible in these old clods of earth in which vineyards grow and from which the country’s wines are made. The geology of our wine regions presents the industry with an incredible opportunity to emphasise an aspect that make our wine offerings totally original and captivating. Diversity of soil, dating back 700m years to the beginning of planet earth. If that is not a USP, what is?”

Since the first Seriously Old Dirt vintage from 2012, the wine has attracted a keen local and international following. Partly for it taking ownership of the fact pertaining to the old Cape soils that host the vines from which the wine is made. But also for the premium quality offered by this approachable red wine with its supple, juicy mouth-feel and delicious berry-flavours. Dominated by Cabernet Sauvignon, Seriously Old Dirt sees the varieties of Merlot, Malbec and Cabernet Franc adding dimension and nuance to the final wine.

The lady responsible for this wine is serious, but not old. Arlene Mains is Seriously Old Dirt’s head-winemaker, quick to confirms Ratcliffe’s commitment to soil as the principal building-block of any good wine.

“Soil is the foundation, the life-blood and the home of a vineyard,” says Mains, “and it is this earth that defines the personality, the quality and the taste of the grapes the vineyards are going to give me to make wine from.”

With an MSc in Wine Microbiology from Stellenbosch University, Mains has worked at Château Mouton Rothschild in Bordeaux as well as multiple vintages at Opus One, the cult Californian brand that began as a collaboration between the Rothschilds and Robert Mondavi. It was spending time in the vineyards at Opus One that gave her these insights into the importance of viticulture and soils.

“No matter how many times one says it or hears it, there is one fundamental: Wine is made in the vineyard,” says Mains. “We are farmers first, and as per the definition a farmer lives and works with what the soil has to offer. When making Seriously Old Dirt we select vineyards from leading Cape appellations recognised for their ancient geology. Not because it sounds good in the marketing space, but because old soils have a specific weathered structure that ensure the vineyards grow grapes of enticing complexity for structured wines with a discernible and unbridled deliciousness.”

Cabernet Sauvignon, the King of Red Wine Grapes, will always drive the Seriously Old blend, something Ratcliffe is adamant about. “Cabernet Sauvignon and Cabernet Sauvignon-dominated Bordeaux blends from South Africa are my loves – I am going to have Cabernet Sauvignon on my gravestone, which will lie, I believe, on top of some seriously old dirt,” he says.

The 2020 vintage of Seriously Old Dirt has 86% Cabernet Sauvignon, 8% Merlot, 4% Malbec and 2% Cabernet Franc. And in composing the blend is one of the area’s where true craftmanship comes into winemaking.

The young wines, on completing malolactic fermentation, gives Arlene and her team an idea of the percentages of that vintage’s blending components. “Different varieties and vineyards are, however, aged separately in old French barriques (225l),” she says. “After six months the barrels will be assessed, and the final blend brought together. The wine is then sent back to barrel as a complete whole to integrate and mature further for six months.”

All this talk of quality and criteria and selection poses the question: what does Seriously Old Dirt aim to be as a wine?

Mains smiles. “There is a lot of academic speak and intimidating talk in the world of wine,” she says. “But the most important part of the wine process, is the consumer. So the aim of Seriously Old Dirt is to make a wine that is unique in terms of the origins of its vineyards and its soils, as well as in the flavour profile. But also a wine that is marked by a wine’s most important attribute, and that is a delicious drinkability in the glass. A wine for enjoying and celebrating the pleasure of wine and of life – things as old as civilisation itself.

Proud Mary

Culture Wine Bar

Owned by Matt Manning of Grub & Vine on Cape Town’s trendy Bree Street, Culture offers a curated selection of South African cult classics as well as some hidden gems, speciality international imports and natural wines, in a warm and inviting atmosphere. “The Wanderlist” is the name of Culture’s exciting recent collab with Radford Dale – a selection of premium imports from around the world that’s kept in a state-of-the-art, temperature-controlled wine fridge. And what of the food menu? “Culture follows the same ethos as our bistro: simple, honest and delicious fare that works beautifully with wine,” says Matt.

Voisin Bread & Wine

Voisin (“neighbour” in French) is a micro-bakery and boutique wine store run by Jaco Smit at 44 Stanley in Joburg. All the ingredients used here are locally sourced: think stone- ground flour from Prieska and the Drakensberg, hand-harvested sea salt from the Kalahari, filtered water, and natural leavening. It takes about 36 hours from start to finish to create a loaf, and no two are the same. Alongside the bread, Voisin specialises in uncommon, exciting wines from underrated South African producers, resolutely supporting winemakers who focus on organic viticulture and natural winemaking. Voisin is now closed.

Flor Wine Bar

This understated, fresh-looking spot brings a taste of Italy to Joburg. Situated on the corner of Jan Smuts Avenue and Bolton Road, Flor shares a space with Coalition Pizza – fitting, since pizza and wine are boon companions. With an almost completely Italian wine list on the chalkboard (South African wines are available on request), you can scan the options for wines by the bottle or glass – or, if you’re feeling rebellious, opt for a classic margarita.

Leo’s Wine Bar

Popular Cape Town CBD lunch spot Max Bagels transforms into a hole-in-the-wall wine bar by night. Founded by Matthew Freemantle, the intimate spot spills out onto the pavement in the evenings. Favouring wines that are made with minimal intervention, unusual cultivars and alternative winemaking processes, the Leo’s list changes constantly – which means a new experience with each visit. The team often collaborates with chefs and winemakers on pop-ups and takeovers, but constants on the food menu include the famous pizza bagels and a variety of bar snacks to complement the curated list of wines.

Publik

From the very beginning, innovative and alternative wine bar Publik had been conceptualised to veer away from the stereotypical watering hole. Owner David Cope’s idea was to take the snobbery out of wine with a humble and heartwarming space, now in its second iteration on the corner of Kloof Nek Road in Cape Town.

A cute terrazzo-and-wood hatch opens to the street, with wooden and metal bar stools lining the exterior of the space. “We try to find the most interesting varietals, so guests don’t have to browse another list filled with wines they already know, but can instead try something interesting,” David explains. “Often, these wines are made by smaller producers who deserve more recognition; hence we like to support them. Rather than offering a huge list, we rotate wines to ensure there’s always something new.” Food options include cheese and meat boards, and other delectable items sourced from local suppliers.

The 2019 vintage of Series M is jubilant with an explosion of intense red and black berries. The combination of plush fruit and sticky tannins make the wine feel like it just fills up your palate and lingers there just long enough to tempt you to have another sip..and then another. 

The new vintage:  Vilafonté Series M 2019 

I vividly remember the first time I came across a bottle of the Vilafonté Series M. I was in a new job and wine was a big part of it. My  knowledge and “booksmarts” on wine all those years ago were certainly a lot further ahead than my street smarts. 

I knew nothing  about this wine, wrapped in red tissue paper, except that, if it was important enough to form part of the reserve cellar library for fine wines. 

As a wine enthusiast the opportunity to enjoy good wine is always a pleasure, as a sommelier the opportunity to stock, cellar and collect wines that are respected and recognised as iconic equals great memories. I remember the feeling before tasting Series M for the first time. The feeling that, “finally! Now I have my chance. This is going to be good.” …It is a lot to live up to for the wine – and this wine did not disappoint!.

The 2019 vintage of Series M is jubilant with an explosion of intense red and black berries. It is still  young and fruit dominant but there are layers of interesting aniseed and cinnamon bark notes that hint towards what the wine will look like with the benefit of age. The texture though is what I enjoy the most. The combination of plush fruit and sticky tannins make the wine feel like it just fills up your palate and lingers there just long enough to tempt you to have another sip..and then another. 

With my culinary background it’s always fun to think of food when tasting a wine like this – a rich slow cooked braised oxtail with pappardelle pasta. I can just taste the  bright red fruit elements  cutting  through the rich meat and the darker fruit elements complimenting the intense slow cooked sauce. The pappardelle  which absorbs sauce like no other pasta fills the palate and complement the amazing texture of the wine perfectly.

A song that uses science to change the way you taste wine, and it’s amazing. Nedbank and the Cape Winemakers Guild unveils Tasting Notes: A Story of Sound and Wine

We all know wine and food pairings are a thing, and hey, wine and music as a pairing doesn’t sound too unrealistic either.  But have you ever heard of sound interacting with your brain to change the way you perceive taste? Apparently, this is why food tastes so bad on an airplane. The team at Nedbank and the Cape Winemakers Guild had heard about this and, as a result, they created a music track using a combination of science and creativity that is proven to heighten the flavours of any Cabernet Sauvignon. The result – red wine has now become even more delicious than ever.

Tasting Notes: A Story of Sound and Wine has become a unique wine-tasting experience and passion mash-up ─ a new way of engaging with wine. According to Khensani Nobanda, Nedbank Group Executive for Marketing and Corporate Affairs, the idea came about after the national lockdown and the corresponding alcohol bans led to the wine industry needing to find a way to start 2022 with a bang.

Over the past year, the South African wine industry has gone through significant challenges due to Covid-19. So, Nedbank, as a long-term supporter of wine, together with the Cape Winemakers Guild, set out to transform the way people see wine through music.

‘Music is a universal language and the right wine can make any experience more pleasurable. So, we set out to tap into our collective love of music and create a literal wine-and-music pairing to achieve our goal of opening up wine to new audiences,’ says Nobanda.  

The Tasting Notes creation process entailed translating a Cabernet Sauvignon’s tasting map into an instrumentation map. This was achieved by gathering data through electroencephalography (EEG) headset technology, which measured emotional responses during various rounds of sensory wine-tasting experiences.  This data was then combined with sound-to-taste mapping to plot the tasting experience into a song.  After an extensive testing period, the result was a track that peels away the flavours of any Cabernet Sauvignon, which is one of the most available, loved and recognised grape varietals the world over.
